The GR®36 crossing from Caudiès-de-Fenouillèdes to Bourg-Madame passes through Caudiès-de-Fenouillèdes, Fenouillet and Fosse. The GR®36 route includes the Saint-Jaume Gorges, the Château de Fenouillet and the Tour Sabarda.
The “Sentier de Fenouillet” begins in Caudiès-de-Fenouillèdes. The easy, 9 km hike is marked with GR and PR signs. For 1.3 km, it passes through the narrow Saint-Jaume Gorges before crossing a small bridge; the passage through the gorges takes around 20 minutes.
The “Propriétés du Vicomte de Fenouillet” hiking trail runs along the foot of the Tour Sabarda; a detour to the tower takes five minutes there and back. There is a shaded picnic area at Notre-Dame de Laval.
History and Culture
The remains of Castel Sabarda in Fenouillet have been listed as a historic monument since 27 October 2015. Castel Sabarda is a rare secondary fortification, remarkable for its homogeneity, which supplemented the surveillance system of the former border.
At the foot of Castel Sabarda are the remains of the former Saint-André church. They are mentioned in a papal bull from 1011 as part of the possessions of the Saint-Pierre de Fenouillet monastery.

The Château Saint-Pierre de Fenouillet is freely accessible year-round and has information panels on site. It can be reached on foot in two minutes from the entrance car park in Fenouillet. From there, visitors can enjoy panoramic views of the village, the Saint-Jaume Gorges and the Tour Sabarda.
