Pauilhac is described as a fortified village and first entered the historical record in 1287. The historic fortifications enclosed a castle mound on which a seigneurial castle had been built. This historic castle mound was removed around 1830.

Ardouin de Bouillas founded Bouillas Cistercian Abbey in 1125. Around 1826, Bouillas Abbey was destroyed. Before the 15th century, Saint-Orens Church belonged to Bouillas Abbey.

The major reconstruction and renovation work on Saint-Orens Church began in 1840. The restoration of Saint-Orens Church was inaugurated in 1891.
