Aux-Aussat is located in the continental ZNIEFF type 2 area of Coteaux de Capvern à Betplan. This area is predominantly forested and mainly comprises oak forests with beech and chestnut trees. Heathland, grassland, meadows, and extensively cultivated agricultural areas can also be found locally. Coteaux de Capvern à Betplan provides a habitat for animal and plant populations and is significant in terms of landscape and geomorphology.

The local present is represented by the Eauzons pilot farm in Aux-Aussat. It is a centre for research and development as well as training and innovation, and has a production area of 2,000 m².
