The medieval Cité of La Couvertoirade encompasses a historical heritage created by the Knights Templar and later by the Knights Hospitaller. The Château Templier de la Couvertoirade was built at the end of the 12th century, is classified as a historic monument, and is considered the only castle built by the Knights Templar in France. The final section of the GR71 on the hillside offers a view of the Templar Cité; the route then follows the ramparts into the medieval village.

The GR® 71C is an 83-kilometre circular route through the Parc Naturel Régional des Grands Causses and starts in La Couvertoirade.

The Moulin du Rédounel, built in the 17th century, is located on the heights of La Couvertoirade and overlooks the medieval Cité and the landscapes of the Causse du Larzac. During Les Enfarinades, the sails of the Moulin du Rédounel can turn again, and the mill produces flour as a vivid demonstration of historical craftsmanship for visitors.
